1 lb Italian sausage
1 clove garlic, minced
1/2 onion, chopped
2 (14-oz.) cans beef broth (I use low sodium)
1 (14.5-oz.) can Italian style stewed tomatoes
1 cup sliced carrots
1 can great northern beans, undrained
2 small zucchini, cubed
2 cups fresh spinach, torn
salt and pepper to taste

Directions:
In large soup pot sauté onion and garlic until tender. Add Italian sausage and brown. Add beef broth, tomatoes, carrots, beans, and zucchini. Bring to slow boil. Simmer uncovered until carrots and zucchini are tender. Turn off heat, add spinach and cover for 5 minutes. Serve immediately.
