2 large chicken breasts
1 small onion chopped
1 clove garlic minced
1 can black beans (drained)
1 can diced tomatoes (drained)
1/3 c. chopped red and yellow peppers
1 c. shredded Cheddar cheese
4 oz. sour cream mixed with 1/2 package taco seasoning
8 flour tortillas
1 (12 oz.) jar enchilada sauce (My favorite is Trader Joe's)
3/4 c. shredded cheese
1/2 c. rice optional

Directions:
Directions:
Boil chicken and shred. Sauté onion, garlic, beans, and bell peppers. Add shredded chicken.
On low heat, add tomatoes, sour cream, 1 cup cheese, and rice (if using rice). Heat until cheese is melted. Put mixture into tortillas in 9 x 13 inch glass baking dish. Pour enchilada sauce over top. Cover with foil and refrigerate for 6 to 10 hours. Bake covered at 350º for 45 minutes. Remove foil and sprinkle with remaining cheese the final 10 minutes of baking.
