2 eggs, beaten
1/2 cup taco sauce
3 jalapeño peppers, minced
1/3 cup bread crumbs
1 tsp salt
1/4 cup chopped onion
1 1/2 lbs. ground chuck
1/4 cup taco sauce
1/3 cup Monterey jack cheese

Directions:
Directions:
Combine first six ingredients in large bowl. Stir until blended. Add ground chuck and mix well. Shape into a 9x5 loaf. Place in baking dish. Spread taco sauce over loaf.

Bake uncovered at 325º for one hour. Sprinkle cheese on top of meatloaf and bake an additional five minutes or until cheese melts.
