10 Graham crackers
4 T Butter

Filling:
4 packages (8 oz) cream cheese, softened
1 C sugar
3 T all-purpose flour
1 tsp lemon zest, finely chopped
1 T lemon juice
4 eggs, room temperature
1/2 cup sour cream
1/2 tsp vanilla

Directions:
Directions:
1. Preheat oven to 325. Spray sides of springform pan with non-stick cooking spray.
2. For crust, crush crackers into fine crumbs. Melt 3 T butter in microwave; add to crumbs and mix well.
3. Add crumb mixture to pan. Tilt pan to lightly coat sides with crumb mixture. Press remaining loose crumb mixture into bottom of pan. Bake 8 minutes.
3. For filling, place cream cheese in mixing bowl. Add sugar, flour, lemon zest and juice. Beat at medium speed for 3 minute until well blended. Add eggs; mix at low speed for 2 minutes. Blend in sour cream and vanilla. Use scraper on sides of bowl to get mixture well blended.
4. Pour filling into crust. Bake 55-60 minutes or until center appears nearly set when gently shaken. Remove from oven to cooling rack. Immediately run paring knife around sides of cake to loosen from pan. Cool completely.
5. Release collar from pan. Refrigerate at least 4 hours or overnight.

The trick to not have any cracks in the cheesecake is to have all ingredients at room temperature. Try not to open the oven during cooking time until the very end. You can even keep the cake in the oven to cool after turning off the heat.
