2 cups chopped, cooked chicken
4 cups water
1 chopped onion
2 chopped celery stalks
4 peeled, sliced carrots
4 scrubbed, diced potatoes
2 Tbsp olive oil
3 chicken bouillon cubes
1 tsp salt
1/2 tsp black pepper
1/2 tsp rosemary
1/4 tsp thyme
1/4 tsp oregano
1/4 tsp basil
1/8 tsp nutmeg
2 Tbsp cornstarch
1/4 cup cold water

Directions:
Directions:
Saute onion and celery in olive oil in a large pot over medium heat. Add carrots and potatoes. Cook for 5 minutes. Add water, bouillon, and seasonings. Put on lid and turn up heat to high to bring to a boil. Once boiling, turn heat down and simmer for 20 minutes or until carrots and potatoes are fork tender. Add chopped chicken. Mix cornstarch into water and slowly add to stew mixing constantly. Once thicken, remove from heat and serve with warm biscuits.
