3 medium zucchini
3 medium summer squash
1 red onion
1 package of Eckrich Turkey smoked sausage ©
1 T. olive oil
1/4 c. Italian salad dressing
1/4 c. water
seasoning salt
pepper

Directions:
Directions:
1. Slice zucchini, squash, and onion into 1/2 to 1 inch slices (as desired).

2. Using a large skillet, fry veggies in oil and Italian salad dressing until slightly brown and tender. Meanwhile slice the turkey sausage. (If veggies get too dry while cooking add the 1/4 cup of water)

3. Add sausage to mixture, seasoning salt and pepper to taste, stir and cook for additional 5 minutes.

4. Serve as is or over rice. Good for a side dish or main course.

Donít feel like standing over the stove browning veggies?? Throw all ingredients in a pot (using a full cup of water), cover and cook about 20 min. Stirring only occasionally. Tastes the same and you donít have to slave over the frying pan.

This is a juicy dish, you will need a slotted spoon

Sub bacon grease for oil if you have it
