1 unbaked 9” pastry shell (pie crust)
3 eggs
1 c. dark or light corn syrup
1 c. sugar
2 Tbsp. margarine (melted)
1 tsp. vanilla
1/8 tsp. salt (if nuts are not salted)
1 c. pecans (preferably fresh from Mema’s)

Directions:

Beat eggs slightly. Mix in syrup, sugar, margarine, vanilla and salt, then add the nuts. Pour into unbaked shell. Bake at 400 degrees for 15 minutes. Reduce to 350 degrees and continue baking 30-35 minutes. Filling should be slightly less set in center than around edges.

Pecan Pie Tarts- These are a Pennington Family Tradition! Roll out dough and use a circle cookie cutter. Place circles of dough in a small tart pan and fill with filling. Continue to check so that they don’t burn!

De Luxe Nut Date Pie- Substitute 1 cup finely chopped dates and ½ cup walnut or pecan halves.
