2 cups flour
2 cups sugar
2 tsp. baking powder
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
1 1/2 cups vegetable oil
3 cups grated carrots
1/2 cup chopped nuts (optional)
4 eggs

Carrot Cake Icing:
1 box confectioners sugar
1 - 8 oz. package cream cheese
1/4 cup butter or margarine
2 tsp. vanilla

Combine ingredients and beat until spreading consistency.

Directions:

Stir together all ingredients except eggs. Add one at a time, beating well after each. Pour batter into greased and floured 9 x 13 inch pan. Bake at 350 for 45 to 50 minutes.
