2 eggs (beaten)
2/3 cup Wesson oil
2 tsp vanilla
1 tsp lemon rind
3/4 cup sugar
2 cups plain flour
2 tsp baking powder
1/2 tsp salt

Directions:
Directions:
Beat eggs and add Wesson oil, vanilla and lemon rind. Then add sugar, flour, baking powder and salt. Mix well.

Drop 1 tsp of batter on greased cookie sheet 2 inches apart. (Grease bottom of glass and dip into sugar. Press down each cookie. Dip in sugar each time.

Bake at 400 for 8 - 10 minutes
