1 yellow onion
cheese tortellini
2 tbsp. butter
3 14.5-oz. cans of low-salt chicken broth or stock
1/2 cup grated Parmesan
14.5-oz. stewed Italian tomatoes
dried basil, to taste
salt, to taste
pepper, to taste
1 bag fresh spinach

Directions:
Directions:
Sauté the onion and butter in a medium or large skillet. Then, add chicken stock. Add tortellini and bring to a boil. Then slowly add Parmesan cheese. Sprinkle it over soup and stir. Next add the stewed tomatoes. Add basil and pepper, to taste. Finally, add the spinach and stir until spinach has mixed in.
