1 1/2 pounds mild pork sausage
1 Bermuda onion, chopped
1 1/2 cans beef broth
1/2 cup chopped green chile
4 tablespoons flour
1 cup heavy cream

Directions:
Directions:
Break sausage into small chunks and fry very crisp. Set meat aside.
Drain most of the fat and fry onion in the same pan. In blender, puree broth, chile and flour. Add to onion and simmer 10 minutes. Add cream and simmer 5 minutes more. Add meat and serve over biscuits.

My Mom doubles this recipe for our family and makes it the day before and warm it on Christmas morning. Please roast your own chile, it will taste much better than the stuff out of the can or freezer.
