1 1/2 c. all-purpose flour
1 1/2 tbsp. sugar
1 1/2 tsp. baking powder
1/4 tsp. salt
1/4 tsp. baking soda
1/2 stick (1/4 cup) cold, unsalted butter, cut into cubes
3/4 c. buttermilk
1 tbsp. milk or cream for brushing biscuits

Preheat oven to 425F.
Sift dry ingredients into large bowl. Blend in butter with fingertips until it resembles cornmeal. Add buttermilk and stir with a fork just until moistened. Turn dough onto floured surface and knead gently. Pat dough out until it is 1/2 - 3/4 in. thick and then use 2 in. cookie or biscuit cutters. Place on ungrreased cookie sheet, allowing space for expansion. Brush tops with milk or cream. Bake 12-15 min. or until pale golden.
