1 med. onion
2 stalks celery
box chicken broth
milk
salt and pepper to taste
Cheddar cheese

Directions:
Dice the potatoes in various sizes, and par boil.

Drain off the water, add the chicken broth, diced onion and celery. When the onions become clear, add about a cup of milk, the potatos will thicken the soup as they cook down. ( I mash a few of them to help it out).
If you want cheese soup, temper down and add about 1 1/2 cups of cheese, then stir.
