6 c. chopped rhubarb
1 1/2 c. granulated sugar
5 tbsp. quick-cooking tapioca
1 tsp. vanilla
11 oz. can mandarin oranges, drained
1 c. brown sugar, packed
1 c. quick-cooking oatmeal
1/2 c. flour
1/2 tsp. salt
1/2 c. cold butter

Directions:
Directions:
Preheat oven to 350. Mix rhubarb, granulated sugar and tapioca in a glass bowl; let stand 15 minutes. Stir in vanilla; pour mixture into a greased 13x9 inch pan. Top with mandarin oranges. Mix brown sugar, oatmeal, flour and salt in a bowl; cut in butter until crumbly. Sprinkle over last layer. Bake 40 minutes or until golden brown. Refrigerate leftovers.
