1 lb potatoes peeled and quartered 1/2 c all purpose flour 1/4 tsp salt 1/8 tsp seasoned pepper 1 slice white bread cubed 2 tbsp butter 1 egg beaten 2 tbsp snipped parsley 1/4 c fine bread crumbs
Boil and mash potatoes (2 cups). Cook bread cubes in butter until golden. Add to potatoes, stir in egg, flour, salt, pepper, and parsley. Use 1/4 c potato mixture for each dumpling. Cook in salted water 5-7 minutes. Brown bread crumbs in butter and serve on dumplings.
