4 lb. russet potatoes
8 oz. bacon
1/2 cup flour
1 1/2 cup water
1 cup cider vinegar
1/2 cup sugar
1 t. salt
1/4 t. black pepper
3/4 cup chopped green onions
3/4 cup chopped celery
1/4 cup chopped fresh parsley

Directions:
In a large stockpot, cook the whole potatoes in salted boiling water until fork tender. Drain, cool, and slice about 1/2 inch thick. Set aside.
Cut the bacon into small pieces. In a large skillet, fry the bacon until crisp. Remove and drain. In the same skillet, reduce the heat to medium and add the flour to the drippings, then whisk until smooth. While whisking, add water, vinegar, sugar, s&p. Whisk constantly until the dressing is thick and smooth, about 3 minutes. Add the potatoes, back , green onions, and celery. Toss gently until well mixed. Cook until heated through, about 5 minutes. Transfer to serving dish and top with fresh parsley.
