3/4 cup corn meal
1/4 cup flour
2 teaspoons baking powder
1 teaspoon salt
1 egg

Directions:

Mix the dry ingredients together in a bowl or saucepan. Add the egg and milk & stir. Add enough milk to get to the right consistency (not too thick/not too thin); thinner for making fried cornbread pancakes; thicker if you're going to bake it. If baking, heat oven to 425º and bake about 15 minutes or until top is golden brown.
