3/4 cup Dijon
6 – 8 cloves of garlic (minced)
1/2 cup grainy mustard
Freshly ground pepper to taste
DO NOT ADD SALT AT THIS POINT

Directions:
Directions:
Whisk ingredients together then slowly whisk in about 1/2 to 3/4 cup olive oil until creamy consistency.
Trim / prepare roast (removing silverskin if it hasn’t already been removed)
Completely coat roast with mixture, cover & refrigerate to marinate (up to 24 hours)

Sprinkle roast with salt (to taste) prior to placing on BBQ. Works well on a rotisserie or just place on grill and toss until tenderloin is cooked to your desired ‘doneness’.
