Ingredients:  
1/4 C mojo marinade(from Publix), 1 Tbsp extra virgin olive oil, 2 med tomatoes, 1 cucumber, 1 14oz. can artichoke hearts, 2 Tbsp slice black olives or more if you like.

Directions:
Directions:
Combine mojo, olive oil in salad bowl, cut tomatoes and one half cucumber into bite size pieces, add with remaining ingredients to dressing, stir until well coated, chill until ready to serve.
