1-1/2 cups whole wheat flour
1/2 cup oat flour
2 tsp baking powder, divided
1 tsp baking soda
1/4 tsp salt
1 cup canned crushed pineapple
1/4 cup softened butter
1/2 cup maple syrup
1 tsp vanilla
2 medium carrots, peeled and grated

Preheat oven to 350º. In medium bowl, combine flours, 1-1/2 teaspoon baking powder, baking soda and salt. In a large bowl, combine pineapple with 1/2 teaspoon baking powder. Add butter, maple syrup, and vanilla. Mix well with spoon. Slowly mix dry ingredients into wet. Mix in grated carrot. Scrape batter into lightly oiled 8-inch baking pan. Bake 45 to 50 minutes or until toothpick inserted in center comes out clean.
