4 lbs ground meat (beef or pork would work)
1 large onion
2 cloves garlic
1 tsp ground oregano
1 tsp cumin seed
3 T chili powder
2 16-oz cans stewed tomatoes
2 c hot water
2 green bell peppers, chopped
3 large red and 3 large yellow peppers, chopped
2-3 jalapeņos to taste
Salt to taste

Directions:
Put the meat, onion and garlic in a large heavy boiler or skillet. Sear until light colored. Add the oregano, cumin, chili powder, tomatoes, and hot water. Bring to a boil, lower heat and simmer about an hour. As the fat cooks out skim it off. Add peppers and salt to taste and cook for 15 minutes.
