3 lbs of boiled medium shrimp
2 medium onion, quartered and thinly sliced. Use Vidalia onions if you can get them.
1 teaspoon celery seed
1 cup extra virgin olive oil
6 garlic cloves, thinly sliced
14 bay leaves
1 teaspoon fennel seed
1 teaspoon mustard seed
4 hot dried chili peppers
1 teaspoon freshly ground white pepper
1 teaspoon coriander seeds
1/4 cup white wine vinegar
1/2 cup fresh lemon juice

Directions:
Directions:
Combine all ingredients in a bowl and toss thoroughly, donít be timid get in and use both hands. Pack all the ingredients into a glass jar or bowl, cover and refrigerate overnight to allow the flavors to come together. Keeps in the fridge, tightly sealed for up to 1 week. Make sure to make these at least 1 day ahead so that the flavors all meld!
