1 Yellow cake mix baked in 3 layers and cooled.

Icing-4-5 large oranges, 2 1/4 cup sugar, 3 tablespoon cornstarch, 3/4 cup water

Directions:
Directions:
Grate orange peel from 2-2 1/2 oranges on fine side of grater. Peel oranges and remove visible white from outside of fruit. Grate the entire orange into bowl. Mix peel, oranges,water and sugar in a medium sauce pan. Cook on med-med high heat for appx 7-10 minutes until mixture reduces some. Mix Cornstarch with 1/3 cup water to melt and add to pot. continue to cook until mixture starts to thicken. Set this mixture aside and cool (very important step!) Icing will setup some when as it cools. When completely cool ice cake.

This was Uncle Henrys favorite cake. Mamal made him one every year for his birthday. The hard part of this cake is preparing the oranges. Use a very sharp grater for easier grating of peel. DO NOT USE juice instead of oranges.. it will not work! Also DO NOT try to put in food processor for a short cut...It will not work....This is an old family Favorite!
