Salt Pork
Cornmeal

Slice thick
Cover with a bit of water and bring to boil.
Discard "salty" water, dab dry & dredge in cornmeal.
Fry in a few Tsp. of hot oil til brown.

Salt Pork, "today" may be purchased in small squares at most any market.

However FRESH Side Pork is even better...but harder to obtain!
You must go to a Butcher Shop and order a whole pork belly. They will then usually cut and wrap to your specifications.
