1-cup margarine
½ cup sugar
1 large egg
2-cup flour
1 tsp vanilla
Seedless raspberry preserves

Directions:
Directions:
Preheat oven to 350°
Beat margarine till creamy with electric mixer, add sugar, beating well
Add egg, vanilla until blended

Form into small balls, place on greased cookie sheet, and 2 inches apart.
Flatten with bottom of cup wrapped in damp paper towel.
Cut out circle in middle of ½ of cookies with a thimble.
Bake 8-10 minutes, cookies will be pale.
When cooled, spread jelly on cookies and make sandwiches.
Top with powdered sugar
