Per Batch: 4 qts diced fresh peeled tomatoes, 1 qt tomato puree, 2 qts hot peppers, 2 qts sweet peppers, 1-2 c garlic, 1-2 c chopped cilantro,1/4 c salt, 1 c vinegar, 2 12 oz cans tomato paste Batch = 16 pts
180 pts = 5 boxes toms, 2 boxes jalapeņos, 2 boxes bell peppers, 1 box anaheim, 1 box serrano, some habanero, 30# onions, 4 doz ears of corn, 1 large container garlic, 20 cans tomato paste, 1 box salt, 1 gallon vinegar, 2 bags cilantro

Bring all ingredients to a boil, simmer for 20 minutes. Pack in jars and process for 30 minutes. For Salso con Maize: sub fresh cut corn for some of the sweet peppers. For Salso con Ajo, add additional chunky cut garlic.
