This recipe comes from our visit to Chile during Peter and Sandra’s wedding. I was so taken with the simple dressings on salads in Santiago, and I discovered it was just a combination of olive oil and lemon juice. So…what I do is mix a little of the two together, usually a little more olive oil than lemon juice. Add sea salt and pepper (optional), and you’ve got a simply delicious dressing for any greens. (Frankly, I prefer arugula). Add other vegetables (tomatoes, avocados, green onions, etc.) if prefer, but keep it simple.

Some might add a little Dijon mustard to the dressing and maybe a little minced garlic. Whatever your taste!
