Ingredients:  
1 fresh pineapple
1/4 c. unsalted butter
1/4 c. brown sugar
1/4 c. spiced rum (or other liquor)
1 c. pineapple juice
cracked black pepper to taste

Directions:
Directions:
Peel and core pineapple, slice into desire shape - place dry saute pan over med heat till pan is proper temp - add pineapple pieces and brown both sides - lower temp to med and add butter and brown sugar - when mixture begins to caramelize add rum and flame - add pineapple juice and black pepper and simmer till sauce begins to thicken - serve over ice cream or toasted pound cake.
