6 ripe bananas
2 cups sugar
1 cup/stick butter flavored shortening
4 eggs
4 cups flour
2 tsp baking powder
1 tsp salt
1 cup chocolate chips
1 cup chopped walnuts or pecans

2 tsp baking soda
2 Tbsp warm water

Directions:
Directions:
Mash bananas, add sugar. Let stand for about 15 minutes(this is another tip.) Add shortening to mixture; beat well. Add eggs one at a time; beat well. Add flour sifted with baking powder and salt. Add nuts and chocolate chips. Dissolve soda in warm water; stir into batter until well blended. Spoon into muffin/cupcake papers. Bake at 350 degrees for about 22 minutes, or lightly browned on tops.


This is actually a wonderful banana bread recipe. This amount makes 2 loaves. Bake at 350 for 1 hour or until toothpick comes out clean.

Bananas that are starting to turn bad can be frozen. When in the mood, just thaw and whip! *It actually makes better muffins because you get the natural juices of the banana when they thaw out.
