1/2 cup chopped onion
1/2 cup chopped celery
1/2 cup chopped carrots
1 can black beans
1 can diced tomatoes
1 can corn
1 - 2 cups shredded, cooked chicken

Directions:
Directions:
Sauté onion, celery and carrots until soft. Put in crock pot and add remaining ingredients. Cook on low until heated thoroughly, about 4 to 5 hours on low. This will serve a family of 4. Double it for a larger crowd. Serve with tortilla chips, sour cream, grated cheese, and chopped avocado.
