1 1/2 c. all purpose flour
1/2 c. sugar
2 tsp. baking powder
1/2 tsp salt
1 large egg
1/2 c. milk
1/4 c. vegetable oil

Directions:
Directions:
In a large bowl, stir together the first 4 ingredients; make a well in the center of mix;
Stir together egg, milk, and oil until blended. Add to dry ingredients, stirring just until moistened.
Fold 3/4 c. fresh or frozen blueberries, unthawed, (or other fruit) into batter.
Spoon batter into lightly greased muffin pan (or use paper fill cups) filling 2/3 full.
Bake at 400º for 18-20 minutes. For mini muffins cook less time. Remove muffins from pan immediately.
