Preheat oven to 375°
Prepare foil sheet with powdered sugar.

SEPARATE 4 EGGS ONE AT A TIME OVER A SEPARATE DISH. PLACE THE WHITES IN THE MIXER BOWL AND THE YOKES IN ANOTHER DISH FOR NOW.

MEASURE 1/2 CUP SUGAR AND 1/3 CUP SUGAR AND SAVE IN THESE MEASURING CUPS. PUT ON A WIRE WHISK ON YOUR MIXER.

COMBINE 1/2 CUP FLOUR WITH 1 TEASPOON BAKING POWDER IN A SMALL BOWL AND SET ASIDE.

GREASE AND FLOUR A JELLY ROLL PAN AND CUT WAX PAPER TO FIT.

BEAT THE 4 EGG WHITES IN THE MIXER USING THE WIRE WHISK UNTIL IT LOOKS LIKE SHAVING CREAM. THEN ADD THE 1/2 CUP SUGAR VERY GRADUALLY. PUT THIS MERINGUE INTO ANOTHER BOWL FOR NOW.

RINSE OUT THE MIXER BOWL AND WIRE WHISK WITH HOT WATER. DRAIN WELL. PUT THE EGG YOLKS AND 1/2 TEASPOON VANILLA IN THIS BOWL. BEAT FOR 5 FULL MIN. WITH THE WHISK. GRADUALLY ADD THE 1/3 CUP SUGAR AND BEAT UNTIL DISSOLVED.

FOLD THE EGG WHITE MERINGUE INTO THIS YOLK MIXTURE VERY GENTLY WITH A RUBBER SCRAPER.

SPRINKLE THE RESERVED FLOUR MIXTURE OVER THE EGG MIXTURE AND FOLD IN WITH THE RUBBER SCRAPER VERY GENTLY.

POUR THE BATTER INTO THE PAPER LINED PAN. SPREAD OUT GENTLY AND EVENLY. BAKE IN PREHEATED OVEN FOR 12 TO 15 MIN.

GENTLY USE A TABLE KNIFE TO LOOSEN THE EDGES OF THE CAKE WHEN IT IS FINISHED. INVERT GENTLY ONTO THE PREPARED FOIL SHEET. ROLL UP WITH THE FOIL AND PLACE IN THE FREEZER TO COOL FOR 10 MIN. OR SO.

UNROLL CAKE AND PLACE FILLING ON IT. RE-ROLL WITHOUT THE FOIL. PUT ONTO A PLATE. ADD ICING ON OUTSIDE IF MAKING Buche de Noel. CUT INTO SERVINGS. KEEP ALL FOIL OFF CAKE—IT’S A KILLER ON FILLINGS!
