Grease and flour 10 to 12 cup Bundt pan.

SIFT TOGETHER ONTO SHEET OF WAX PAPER:
2 c. all-purpose flour
2 tsp. baking soda
1/4 tsp. salt

MELT IN TOP OF DOUBLE BOILER OVER HOT WATER:
3 squares (1 oz. each) semisweet chocolate
1/4 c. vegetable oil

COOL SLIGHTLY.

BEAT TOGETHER IN LARGE BOWL UNTIL LIGHT & FLUFFY:
1 and 3/4 c. granulated sugar
3 eggs

SLOWLY BEAT IN:
3/4 c. oil
2 c. pureed cooked beets (from two 16-ounce cans, drained)
chocolate mixture you made
1 tsp. vanilla

SLOWLY STIR FLOUR MIXTURE INTO BATTER. POUR BATTER INTO PREPARED PAN.

BAKE FOR 1 HOUR OR UNTIL WOODEN PICK INSERTED IN CENTER COMES OUT CLEAN. COOL 15 MIN. ON WIRE RACK

DUST WITH 2 TABLESPOONS 10X (confectioners’) SUGAR.
