Need Angel Food Cake pan. Preheat oven to 350
Please read entire recipe.

SIFT, THEN MEASURE:
1 c. cake flour

RESIFT THIS 2 TIMES WITH:
1/2 c. sugar
1/2 tsp. salt

SEPARATE 12 EGGS ONE AT A TIME. PLACE THE WHITES IN THE MIXER WITH THE WIRE WISK ATTACHMENT.

ADD:
1 tsp. cream of tarter

BEAT ON HIGH SPEED UNTIL THE MIXTURE LOOKS LIKE SHAVING CREAM.

ADD 1 CUP OF SUGAR 1 TABLESPOON AT A TIME.

ADD WITH THE LAST TABLESPOON:
1/2 tsp. vanilla
1/2 tsp. almond extract

FOLD IN THE FLOUR MIXTURE USING A RUBBER SCRAPER. TRY TO MIX AND BLEND TOGETHER GENTLY. SCRAPE BATTER INTO A TUBE PAN.

BAKE 45 MIN. COOL IN PAN UPSIDE DOWN.
