3 1/2 c flour
3 c sugar
2 tsp baking soda
1 tsp cinnamon
1 tsp nutmeg
1 1/2 tsp salt
4 eggs beaten
1 c oil
2/3 c water
2 c Libby's canned pumpkin=1-15 ou. can
1/2 c chopped pecans

Directions:

In a large bowl, combine dry ingredients except nuts
In a separate bowl combine all else except nuts
Mix well and then stir into dry ingredients
Pour into 2 small loaf pans that have been sprayed with Pam
Pull spoon thru center from end to end to create a ridge on each side
This will keep the middle lower and will help it to bake more evenly throughout
Top with nuts
Bake@350 degrees for 1 hr.
Test with toothpick or sharp knife, should come out clean
Turn out of pan and let cool
