5 c. all purpose flour
3 c. sugar
5 t. baking soda
2 t. salt
15-17 oz. box Post bran flakes or raisin bran
4 eggs
1 qt. buttermilk (I use 5 cups or more)
1 c. oil
2 t. vanilla

Directions:
Directions:
Mix dry ingredients and moist ingredients separately and then combine both mixtures. Let set in refrigerator 24 hours before baking. Bake at 375º for 20-25 minutes. Batter will last 6 weeks in the refrigerator but will turn dark after a week or two. This will make loaves as well as muffins but you need to increase cooking time. I add applesauce and cinnamon to a small amount of the batter for apple cinnamon muffins and add mashed bananas and chopped pecans for banana nut muffins. Coconut, nuts and cocoa make great German chocolate muffins.

These are a personal family favorite and are a great source of fiber. I've used other bran flakes and even other types of whole grain cereals but you just can't beat Post.
