4-5 fresh cactus pads, or 1 jar of nopalitos;
2-3 Roma tomatoes, diced;
1/2 medium white onion, diced;
1/3 cup chopped cilantro;
1-2 serrano or jalapeņo chiles (or to taste);
1/3 cup crumbled Mexican queso fresco cheese or feta cheese;
1 tablespoon lime juice or to taste;
Salt to taste.

Cut cactus pads (needles removed) into thin strips lengthwise or smaller.

Cook cactus in salted boiling water until tender (or if using jarred cactus, skip this step).

Rinse and drain cactus several times to remove slime.

Place cactus in a medium bowl. Add onion, cilantro, tomatoes, chiles, and lime juice. Mix all ingredients together and season to taste with salt.

Top with crumbled cheese.
