2 lbs. cubed shank beef
1 lb. hamburger meatballs
6-8 c. cold water
beef seasoning
2 c. diced celery, carrots, cauliflower
1 beef boullion cube
1/2 c. vermicelli or rice
salt & pepper
1 pkg. Knorr veg soup mix (opt.)
onion rings (opt.)

Directions:
Directions:
Bring beef to boil, add boullion, celery and carrots and simmer for 1 hour. Add dime-size meat balls, seasonings, cauliflower and Knorr soup mix. Simmer for 30 min. Heat vermicelli 10 min. in soup.

The soup pot was a fixture with many meals at the big table. The older 6 Dutch raised siblings kept the recipe for the younger 6, as only Moesje (moeder) was allowed to cook for Papa's household.
