2 lbs. green asparagus, ends snapped
1 large onion, chopped
3 T unsalted butter or olive oil
4-5 C Chicken or Vege broth
salt & pepper
Hot pepper sauce to taste, optional

Directions:
Directions:
Cut the tips off of asparagus and boil in salted water 5-10 minutes 'til soft. Cut remaining asparagus stalks into 1/2 inch pieces. Saute chopped onions in butter or olive oil until soft, 5-10 minutes, then add asparagus pieces and cook for another 5-10 minutes. Add broth and simmer 15-20 minutes until asparagus is very tender. Puree in blender and return to pan. Add more broth if if needed for consistency and season with salt and pepper. Reheat and add lemon juice if desired and garnish with asparagus tips.
