Large brisket with the fat trimmed off
1 package French Onion soup mix
water
3 - 4 small russet potatoes cubed
1 can Golden Mushroom soup (Campbell's)

Directions:
Place brisket in an oven safe casserole dish and pour soup mixes over it. Add the cubed potatoes then add water to the top of the dish and cover. Bake at 300 for at least 6 hours. (You can also cook it at 275 for 8 hours.) Check on it every couple hours to make sure it still has plenty of water until the last hour. Let the gravy cook down to a gravy consistency in the last hour.

Separate out the potatoes and gravy. Cut the brisket with the grain -- it should be VERY tender. Serves 4.

The most important part of this recipe is making sure the brisket has no fat. It will ruin the resultant gravy if there is too much fat. Also, once you've used this recipe a couple times, you'll know how long your casserole dish will last in the oven without replenishing the water.
