Dei Fratelli Sauce in cans (or frozen tomato puree or canned tomatoes from the summer garden harvest, whatever you prefer)
garlic
minced onion
garlic powder
garlic salt
Italian seasoning (oregano, basil, rosemary, etc)
sugar
Extra Virgin Olive Oil
good Italian sausage (or a rack of country style ribs)
Peccorino Romano cheese (grated or shaved)

Directions:
Fry onions and garlic in olive oil in bottom of large saucepot. Throw in cans of sauce. Add garlic powder, salt, Italian seasoning, 1 tbsp sugar. Taste sauce, see if it tastes good before you add sausage.

Fry Italian sausage until about halfway cooked- add to sauce and cook for a couple hours.

Once an hour or so has gone by, test taste of sauce again- if it is too bitter, add a little more sugar. The sauce should not be sweet, however. Add some Peccorino Romano to taste to sauce.

I like to cut up the sausage in bite size pieces and serve it in the sauce over pasta. Top with Peccorino Romano shaved.

Note: if you want to make the sauce more like a vodka sauce, add heavy cream to it and lots of Romano cheese during cooking.
