Fresh Spinach
Crumbled Bacon (reserve bacon grease)
Grape Tomatoes
Eggs
Sliced Red Onions
Mushrooms (optional)

Dressing:
6 T. Bacon grease
6 T. Red Wine Vinegar
3 tsp. Sugar
1 1/2 tsp. Dijon Mustard
Salt and Pepper

Directions:
Directions:
Cook bacon and reserve 6 T. of fat. (about 8 slices).

Make the salad by adding the first 5 ingredients. You can use as much or as little as you like.

Mix the first 4 ingredients for the dressing in a small pot and heat over medium heat until the sugar and mustard is dissolved. Season with salt and pepper. Make sure it is warm (not hot) and pour over salad.
