1 lg.bag of tortilla chips
1 lb. ground beef
taco seasoning
1 lb. cheddar cheese, grated
2 tomatoes, chopped
1 head of lettuce, chopped
1 sm. carton of sour cream
2 avocados, diced
1 lg. can black olives, sliced

Directions:
Directions:
Brown the ground beef, season with taco seasoning to your taste, and drain. Preheat oven to 350º. Spread the tortilla chips in a large rectangular oven cooking pan. Top with cheese (reserve a bit of cheese for the topping), and place the pan in the oven until the cheese is melted and the chips are hot. Remove pan from oven and add the layers: cooked ground beef, lettuce, tomatoes, the bit of reserved cheese, dollops of sour cream, avocados, and olives. Serve immediately.

Cindy is the late daughter of Tom & June (Walker) Hollenshead, the granddaughter of the late DeWitte & Mary (Waller) Hollenshead & the great granddaughter of the late Charlie & Carrie Lou (Wade) Hollenshead. Her friends loved eating these and they are fast & delicious. OLE!

By the Editor: Cindy was excited about having a recipe in this cookbook and getting her copy of the book, but she passed away unexpectedly on March 27, 2010 at age 55 before the book was printed. Cindy loved life and lived it to the fullest. Her outlook on life was only positive and she was a ray of sunshine to everyone who knew her. Cindy was talented in so many areas and her hobbies included photography, scrap booking, gardening, writing, shopping and reading, having fun with her friends and caring for her birds, Parsley, Rosemary and Thyme.
