2 cups butter, softened
1 8-oz package cream cheese, softened
2 cups sugar
2 egg yolks
1 tsp. vanilla extract
4 ½ cups flour


Frosting:

3 ½ cups confectioner’s sugar, divided
3 T. butter, softened
1 T. shortening
½ tsp. vanilla extract
3 to 4 T. milk, divided
Food coloring

Directions:
Directions:
In a mixing bowl, cream butter and cream cheese until light and fluffy. Add sugar, egg yolks and vanilla; mix well. Gradually add flour. Cover and chill 3+ hours. Roll out on a floured surface to ¼ inch thickness. Cut in 3-inch shapes, place 1 inch apart on greased sheets. Bake at 350 degrees for 10-12 minutes or until set (not browned). Cool five minutes; remove to wire racks to cool.

For frosting, combine 1 ½ cups sugar, butter, shortening, vanilla and 3 T. milk in a mixing bowl; beat until smooth. Gradually add remaining sugar; beat until light and fluffy, about 3 minutes. Add enough milk and food coloring until frosting reaches desired consistency.

Yields about 7 dozen cookies.

(** The key is to make sure the dough is firm, and to have a very floured surface for cutting out the cookies. For small cookie shapes, it only takes 8-9 minutes’ baking time.)
