potatoes, large full pan
2-3 celery stalks, chopped small
1 medium onion, chopped
6 hard boiled eggs, cooled, chopped
2-3 large dill pickles, chopped
6-8 sweet pickles, chopped
large jar pimentos
2 tablespoons mustard
1/4 cup dill pickle juice
1 cup miracle whip, add more if needed
salt & pepper, to taste

I guessed on these amounts. I never measured, just guessed!

Boil potatoes in jackets until done. Peel potatoes and cut into cubes when cooled. Add all chopped ingredients, pimentos, mustard, dill pickle juice, miracle whip, salt & pepper. Mix well and add more miracle whip and pickle juice if needed, to taste.

I learned this recipe from Mom. Jerry used to say that I made the best potato salad he ever had! This is a Coates family favorite.
