1 onion, chopped
3 cloves garlic, minced
1 tbls. olive oil
2 tsp chili powder
1 tsp cumin
1 (28 oz) can crushed tomatoes
4 or 5 C. chicken broth
1 tsp lime juice
1 C. corn kernels
1 C. white hominy
1 (4 oz) can green chili
1 (15 oz) can black beans, rinsed and drained
¼ C. fresh cilantro, chopped
2 boneless chicken breast halves, cooked and chopped into small pieces

Toppings:
crushed tortilla chips
sour cream
green onions
sliced avocado
shredded cheese

In a medium stock pot, heat oil over medium heat. Sauté onion and garlic in oil until soft. Stir in chili powder, cumin, tomatoes, broth and water. Bring to a boil and simmer for 5 to 10 minutes. Stir in corn, hominy, chilies, beans, cilantro and chicken. Simmer for 1 hour. Ladle soup into bowls and top with any of the desired toppings.
