2 eggs
1/2 t dry mustard
1 t sugar
1 T water
bananas ( 2 or 3)
1 c unsalted peanuts

Directions:
Directions:
Bring first 4 ingredients to a boil and remove from heat.
Peel and cut bananas in 1 1/2 inch pieces.
Crush peanuts into very fine pieces.
Dip bananas in sauce and roll in peanuts.
Serve on lettuce leaves.

My mother remembers Mama Baber serving this unusual salad at her dinners in Augusta, Ga in the 1940s and 1950s. Mama Baber was my great grandmother who taught my Moma's mother to cook. She left quite a legacy!
