5 or 6 yellow squash
1 medium sized onion
1 bell pepper
1/4 c sliced pimento
1 c cheddar cheese
1 can cream of mushroom soup
1 sleeve of Ritz crackers
1/2 stick margarine or butter

Directions:
Directions:
Cover squash, onions and bell pepper with water, add salt, pepper and margarine and cook on stove top until soft. Drain well. Mix in cream of mushroom soup, pimento and cheddar cheese. Pour mixture in a casserole dish. Crumble the Ritz crackers well and spread evenly over the top of squash mixture. Dot with margarine. Bake at 350º for about 20 minutes.
