2 cups self rising flour
1 ½ cups milk
Salt and pepper to taste

Disjoint chicken (can use a large fryer or a hen, hen has a stronger flavor and more fat). Cook chicken in water until tender. Add salt (about 1 ½ tsp) and pepper (¼ tsp) to taste. Remove chicken from broth (can remove meat from bone if you desire). Combine flour and enough milk to make a stiff dough. Shape mixture into a ball and roll to a thickness of 1/8 inch on a lightly floured board.* Cut into 1 to 1 ½ inch strips. Drop into rapidly boiling broth; if there is not enough broth add hot water or extra chicken broth. Cover, reduce heat and simmer 8 to 10 minutes. Remove cover and add 1 cup whole milk and bring back to a simmer. Add chicken and remove from heat. Note: For a more tender Dumpling you may cut 1/3 cup shortening into flour.

* if you would prefer to not roll out the dough you can do drop dumplings by pinching off the dough in small stretchy pieces. Drop in boiling water till dough is gone.
