12 taco shells
1 lb. bulk hot Italian sausage (or ground meat, chicken, etc.)
3 Roma tomatoes (chopped)
1 cucumber (peeled, seeded, chopped)
2 fresh jalapeņo peppers (seeded, diced)
1 (8 oz.) pineapple tidbits
1/3 cup red onion (diced)
1/2 cup yellow onion (diced)
2 garlic cloves (diced)
4 Tbsp. cilantro (chopped)
4 Tbsp. brown sugar

Directions:
Directions:
Prepare salsa (tomatoes, cucumber, jalapeņos, red onion, cilantro, pineapple, brown sugar), Let refrigerate for at least 30 minutes.In a skillet, cook the yellow onion, garlic, and meat. Put meat at bottom of the taco; top with cheese, then add the salsa on top and Enjoy!!
